Smashed Avocado with Poached Egg on Toast


Brunch is one of our favorite meals and avocado toast is usually ordered. This recipe combines some unique variations to the traditional recipe but we think it makes it that much better.

Smashed Avocado with Poached Eggs on Toast

  • 1 avocado
  • 1/4 lemon (juice)
  • 1/2 cup cherry tomatoes
  • 1/4 red onion
  • 1/2 cup feta
  • 1/8 cup parsley
  • 1/8 cup dill
  • pinch of salt and pepper
  • 2 slices sourdough bread
  • 2 poached eggs


  1. Chop avocado in half, lemon into quarters, cherry tomatoes into quarters and slice red onions
  2. Dice feta, parsley and dill
  3. Smash the avocado until mushy consistency
  4. Add lemon juice, cherry tomatoes, red onion, feta, parsley and fill to the avocado mixture
  5. Season the mixture with salt and pepper
  6. Toast two slices of sourdough
  7. Spread avocado mixture onto the sourdough
  8. Add two poached eggs to serve
